Taking their lead (perhaps a tad pretentiously) from Le Corbusier's maxim that "the house is a machine for living in", the owners of Stylotel have attempted to break away from the fusty old conventions surrounding the feel and look of a hotel. The two 19th-century townhouses inside which it resides are the only things not ultra-modern about the place. Aluminium wall coverings, floor to ceiling mirrors and illuminated glass furniture are in. As is a lounge (sorry, stylolounge) designed for "well being", and bedrooms sleeping one, two, three or four (a "quatro styloroom" of course), which does seem eminently sensible. Oh, and it's very useful for Paddington station.

Say what you will about the Pre-Raphaelite Brotherhood, they had darned good taste when it came to choosing a residence. Sir John Everett Millais – he of Ophelia drowning decorously in a river fame – lived in this dark-brick Georgian townhouse before it became a hotel. Ironically, it's become an ideal spot for lovers of words rather than images, with Europe's largest academic bookstore right opposite, a clutch of new and second hand bookshops nearby, and the British Library not too far up the road. The bedrooms have been recently redecorated (check out those Audrey Hepburn cushions) and there's a garden in which you can read whatever amazing finds you make during the day.

Cocking a snook at all those other hotels whose bedrooms are carbon copies of one another, Twenty Nevern Square features no fewer than 20 individually designed rooms. The source of influences inside the Victorian townhouse range from Europe to the Orient (the Far East, rather than Leyton) and each bedroom sports hand-carved furniture. The bathrooms are awash with marble and the whole effect is one of boutique luxury. The hotel is situated in a quiet garden square handily placed for both Earls Court Exhibition Centre and the tube station. There's also a Momo Japanese restaurant downstairs and a 24-hour lounge bar featuring work by Sudhir Deshpande (India's Jackson Pollock, apparently, so a must for all drip-art fans). A veritable Mecca for social history buffs. The family that owns the Arran House has dug into the history of both the Georgian residences that now make up the hotel. Though its designer chic stylings can still be pretty pricey during the week, on Sundays the rates go into free fall if you book up early, making it a glam base for forays into Spitalfields Market, Old Street or Brick Lane. A mini-breakfast is delivered to your room, though if the yoghurt, orange juice and banana leaves a hole, you can supplement it reasonably cheaply at the Hoxton Grill restaurant next door.

Usually it's wise to steer a wide berth around any hotel described by its owners as "groovy". In the case of The Pavilion, however, you may make an exception. Another example of a cracking good value Bloomsbury hotel. (Why do so many good ones congregate in the area?) Run by the Beynon family since 1979, the hotel was built as a private residence in 1786 at the behest of one Gertrude Duchess of Bedford, no less, and is typical of the graceful Georgian style. The place is elegantly furnished throughout, with many of the bedrooms retaining their original fireplaces complete with marble surrounds. The jewel in the Jesmond crown, however, is its traditional English garden, designed and created by a member of the family, which provides a peaceful haven for when the British Museum gets too much.

After more than 50 years as one of America's premier hotel rating brands, Forbes Travel Guide is expanding into Europe, and has given just six London hotels a five-star rating.

Already booking flights from Vietnam to London? You can consider Forbes' five star hotels for your luxury staying in the capital. 

The Ritz is not one of them.

Nor is the Mandarin Oriental Hyde Park, which includes a Heston Blumenthal restaurant and has hosted royalty. Both hotels have had to settle for just four stars. 

But what makes a hotel worth a five-star rating? Are four-star hotels enough for your luxury staying after flights from Vietnam to London?

Traditionally, ratings agencies have evaluated hotels' physical facilities. Forbes, which used to be known as the Mobil guide, says its ratings are more focused on service.

'Cared for' toilet rolls

Mystery guests are sent to stay at hotels several times a year and they then assess them against 500 criteria, most of which measure hospitality and service.

Standards include staff being "highly articulate" and avoiding "slang and excessive use of phrase fragments", the ends of toilet rolls being neatly pointed or "similarly cared for" and even a measurement of whether the traffic flow at a buffet is "convenient".

There are 17 categories of evaluation, including "graciousness" and "sense of personalized service".

Only a handful of hotels has fulfilled the five-star criteria. Shanghai has only two and New York just six.

But Mike Cascone, president and chief operating officer of Forbes Travel Guide, was keen to emphasise that London's four-star hotels have not lost out.

"The fours in London scored the strongest we've ever had in an initial market launch in the history of the business," he said, adding that there are "probably more fives to come" in the city. 

Sarah Cairns, director of communications for the Mandarin Oriental, said the hotel had "narrowly missed" a five-star rating, and the hotel was "looking forward" to working towards one during the rest of the year.

The Ritz would not comment on its rating.

All about the staff

Roland Fasel, general manager of The Dorchester and 45 Park Lane, both of which have been awarded five stars by Forbes, said the "crucial" rating was down to his staff's "relentless pursuit of excellence".

And their work is becoming more and more complex, with extravagant requests becoming a daily phenomenon.

Guests have asked for private trains to be arranged for them, and some go hunting and ask for their quarry to be stuffed and put on a pedestal in time for their next visit.

A desperate husband once asked the concierge to repaint a car within 48 hours, as the colour was not to his wife's taste.

"We were able to deliver," said Mr Fasel. "The ultra-luxury business is really about delivering those individual service needs."

This level of personal attention, added Mr Fasel, had transformed London into the world's "most competitive" hotel market over the past 10 to 15 years.

Forbes' Mr Cascone agrees.

"It comes as no surprise that London's hotels and spas performed strongly," he said.

"The personalized service and attention to detail delivered at the city's top properties places them among the finest hospitality experiences in the world."

Indeed, some of London's luxury hotels appear to be recession-proof. Last year was the Dorchester Group's best year in its history.

But the rise of online rating sites such as Tripadvisor, where individual guests can comment on their experiences, means no hotel can rest on its laurels for long.

Felicity Gale from Quintessentially Travel, a bespoke luxury travel agency in London, says that star ratings are "still incredibly important" to their clients, despite other indicators such as Tripadvisor.

"Grading still has the same impact," she said.

She added that Quintessentially was "quite surprised" by some of the Forbes results.
